8 oz. dry rice noodles
1/4 cup Kikkoman® Rice Vinegar
1/4 cup canola oil
1 teaspoon Kikkoman® Sesame Oil
1 tablespoon Dijon mustard
1 clove of garlic, minced
2 tablespoons Kikkoman® Soy Sauce
1 teaspoon of Kikkoman® Sriracha Hot Chili Sauce (optional)
1 cucumber, spiralized
4 carrots, spiralized
- Cook the rice noodles according to package instructions.
- Drain and rinse with cold water until the noodles have cooled.
- In a small bowl, whisk together rice vinegar, oil, sesame oil, mustard, garlic, soy sauce, and sriracha.
- Toss the rice noodles with cucumber and carrots, then add the vinaigrette until the salad is fully coated.
