Creamy Spinach Soup

ingredients

12 ounces butter or vegetable oil
2 1/4 pounds finely chopped onions
1 cup plus 2 tablespoons all-purpose flour
12 cups chicken or vegetable stock
3 3/4 pounds frozen chopped spinach, thawed
1 1/2 teaspoons salt
6 cups Pearl Green Tea Organic Soymilk
3/4 teaspoon grated nutmeg

directions

In large pot over medium heat, melt butter; add onion and sauté about 8 minutes or until soft and translucent. Add flour; cook, stirring, 2 minutes. Gradually pour in stock, stirring until smooth. Add spinach and salt; bring to a boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally. Stir in soymilk and nutmeg. Cook over low heat until heated through.
