Garlic Mashed Potatoes

ingredients

6 pounds russet potatoes, peeled and cut into 1-inch pieces
1 1/2 tablespoons salt, divided
1 1/2 cups Pearl Original Organic Soymilk
6 ounces butter or olive oil
1 tablespoon minced garlic*

directions

To make Garlic Mashed Potatoes: In covered pot, combine potatoes, 1 tablespoon of the salt and enough water to cover potatoes. Bring to a boil, reduce heat and simmer 15 minutes or until potatoes are tender. Drain. In electric mixer with paddle attachment on low speed, mash potatoes. In pot, heat soymilk, butter, garlic and remaining 1/2 tablespoon salt until butter melts. Gradually beat soymilk mixture into potatoes until potatoes are light and fluffy.

*For plain mashed potatoes, omit garlic.
