To make Marinated Shrimp: In non-reactive bowl, combine lime juice, oil, honey and soy sauce. Add shrimp; turn to coat. Cover and chill 30 minutes. (Yield: 6 pounds)
To make Avocado, Sweet Corn and Soy Relish: In bowl, combine all ingredients except avocado. Gently fold in avocado. (Yield: 16 cups)
For each serving, to order: Grill 4 ounces (4 to 5 each) Marinated Shrimp over medium-high heat about 2 minutes per side or until pink and cooked through. Plate. Spoon 2/3 cup Avocado, Sweet Corn and Soy Relish over shrimp; garnish with cilantro sprigs.
