Soy-Glazed Sweet Potatoes and Squash

ingredients

8 pounds sweet potatoes, peeled and cut into 1-inch cubes
8 pounds butternut squash, peeled and cut into 1-inch cubes
¾ cup vegetable oil
2 ½ cups Kikkoman Sweet Soy Glaze
1 cup butter
1 ½ cups crushed amaretti cookies

directions

Toss sweet potatoes and squash with oil in a roasting pan. Roast at 400°F about 30 minutes or until tender. Just before serving, heat Sweet Soy Glaze and butter until butter melts. Drizzle sweet soy glaze mixture over vegetables and toss to coat. Garnish each serving with 1 tablespoon amaretti.
