Mango Salad with Honey Sriracha Vinaigrette

Mango Salad with Honey Sriracha Vinaigrette | Get ready for a refreshing side dish full of healthy ingredients. Sweet mango offsets the earthy flavor of kale, and beans add some serious fiber and protein for a salad that can work as a full meal, too. You can even add some quinoa or other grains for a heartier dish. Prepare the salad in advance, store portions in the fridge for lunches all week, and toss with sweet and spicy homemade dressing right before serving.

Ingredients

3 cups shredded kale
1 cup chopped mango
½ cup chopped cucumber
½ cup black beans
¼ cup finely chopped red onion
¼ cup chopped cilantro
¼ cup shelled pumpkin seeds

For Dressing
¼ cup olive oil
2 tablespoons honey
2 tablespoons Kikkoman® Rice Vinegar
1 teaspoon Kikkoman® Sriracha Hot Chili Sauce
½ teaspoon sea salt

Instructions

  1. Combine ingredients for salad in a large bowl.
  2. Whisk together ingredients for dressing in a small bowl.  Pour dressing on top. Toss to coat. Serve right away.
