Kikkoman Nachos

Makes 10 to 12 appetizer servings

kikkoman products used:

ingredients

1 pound boneless, skinless chicken thighs, cut into ½-inch cubes
⅓ cup Kikkoman Teriyaki Marinade & Sauce
2 tablespoons vegetable oil
1 bag (10 to 13 oz.) tortilla chips
Nonstick cooking spray
1 can (15 oz.) black beans, rinsed and well drained
1 pound (4 cups) shredded Monterey jack or mozzarella cheese
½ cup thinly sliced green onions and tops
¼ cup Kikkoman Sriracha Hot Chili Sauce
¼ cup Kikkoman Soy Sauce
Dairy sour cream, if desired

directions

Marinate chicken in teriyaki sauce 10 minutes.  Drain chicken; discard marinade.  Sauté chicken in hot oil in large skillet over medium heat 5 minutes, or until chicken is cooked.  Remove chicken with slotted spoon; set aside.  Arrange half of chips in large casserole dish or large shallow baking pan sprayed with cooking spray.  Sprinkle with half of chicken, beans and cheese; repeat layers with remaining chips, chicken, beans and cheese.  Bake in 350ºF oven 5 minutes, or until cheese melts.  Sprinkle green onions on top. Blend together Sriracha and soy sauce in small bowl; drizzle half of sauce over nachos.  Serve with remaining sauce and sour cream.
