Thai Smashed Potatoes

ingredients

20-24 baby potatoes, washed
3 tablespoons olive oil
½ teaspoon salt and pepper
⅓ cup creamy peanut butter
⅓ cup water
2 tablespoons Kikkoman® Soy Sauce
1 teaspoon Kikkoman® Sriracha Hot Chili Sauce
1 teaspoon Kikkoman® Rice Vinegar
1 garlic clove, grated or minced
1 lime, juiced
¼ cup chopped peanuts
3-4 green onions, sliced

directions

  1. Preheat oven to 400°F.
  2. Steam potatoes on the stovetop until tender.
  3. On a lined baking sheet, spread out potatoes so that they are 1-2 inches apart. Using a spatula, gently press on the potatoes until they are around ½ an inch thick.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Bake for 30 minutes or until the edges of the potatoes are brown and crispy.
  6. While the potatoes bake, combine peanut butter, water, soy sauce, sriracha, rice vinegar, garlic, and lime juice in a bowl or jar. Whisk well and add more water if the consistency is still too thick to pour.
  7. Once the potatoes are out of the oven, drizzle with peanut sauce, top with peanuts and green onions, and serve!
