1 ripe avocado
1 teaspoon minced garlic
½ teaspoon salt
2 tablespoons freshly squeezed lime juice
2 tablespoons water
1 tablespoon Kikkoman® Rice Vinegar
4 tablespoons vegetable oil
2 pints cherry or grape tomatoes (multiple colors are ideal), washed and sliced in half
3 tablespoonsred onion, finely diced
- Cut avocado in half
- Mash ½ of the avocado in a small bowl
- Whisk together mashed avocado with garlic, salt, lime juice, water, rice vinegar, and vegetable oil.
- Dice the other half of the avocado and combine with tomatoes and red onion in a bowl.
- Drizzle on desired amount of avocado dressing and serve immediately.
