ingredients

1 ripe avocado
1 teaspoon minced garlic
½ teaspoon salt
2 tablespoons freshly squeezed lime juice
2 tablespoons water
1 tablespoon Kikkoman® Rice Vinegar
4 tablespoons vegetable oil
2 pints cherry or grape tomatoes (multiple colors are ideal), washed and sliced in half
3 tablespoonsred onion, finely diced

directions

  1. Cut avocado in half
  2. Mash ½ of the avocado in a small bowl
  3. Whisk together mashed avocado with garlic, salt, lime juice, water, rice vinegar, and vegetable oil.
  4. Dice the other half of the avocado and combine with tomatoes and red onion in a bowl.
  5. Drizzle on desired amount of avocado dressing and serve immediately.
