ingredients

1 large head of cauliflower, broken into small florets
2 tablespoons Kikkoman® Sesame Oil
½ cup carrot, shredded
½ cup green peas, frozen
¼ cup Kikkoman® Less Sodium Soy Sauce
¼ teaspoon ginger, grated
½ teaspoon garlic, minced
Juice of ½ a lime
2 tablespoons coconut sugar
Pinch of red pepper flakes
¼ cup green onion, chopped

directions

  1. To make cauliflower rice, add cauliflower florets to a food processor and pulse until crumbled. (Note: you may need to divide florets into 2 batches for even “ricing”)
  2. Heat sesame oil in a skillet over medium heat. Add cauliflower rice, shredded carrot and peas. Cook 5 minutes uncovered, stirring occasionally.
  3. While cauliflower cooks, combine soy sauce, ginger, garlic, lime juice and coconut sugar in a small bowl. Stir well. Pour sauce over cauliflower and stir to incorporate. Cook an additional 5-7 minutes uncovered. Serve hot with chopped green onion and red pepper flakes.
