Pineapple Soy Steak Quesadillas

ingredients

6 flour tortillas
2 cups mozzarella cheese, shredded
¾ lb. top sirloin steak
½ cup fresh pineapple, finely chopped
½ cup red onion, finely chopped
½ cup green bell pepper, finely chopped
⅓ cup Kikkoman® Less Sodium Soy Sauce
⅓ cup low sodium chicken broth
1 Tablespoon brown sugar
1 teaspoon fresh ginger, minced
½ teaspoon onion powder
1 garlic clove, minced

directions

  1. In a gallon-sized plastic bag, combine Kikkoman® Less Sodium Soy Sauce, chicken broth, brown sugar, ginger, onion powder, and garlic clove. Seal bag and shake ingredients to combine well. Add the steak, re-seal the bag, and turn to make sure the steak is evenly coated. Refrigerate for 2 hours to marinate.
  2. Remove steak. Grill over medium heat (either grill or grill pan) until steak is desired level of done.
  3. Remove steak and cut into bite-sized pieces, then transfer to large bowl. Add in pineapple, red onion, and green bell pepper.
  4. Divide 1 cup of the cheese over three tortillas, then top with steak mixture. Sprinkle with remaining cheese then cover each with a remaining tortilla.
  5. Grill over medium heat until cheese is melty, about a minute on each side. Cut each into six wedges; serve immediately.
