ingredients

2 medium beets, peeled
1 medium jicama, peeled
2 large carrots, peeled
4 mint leaves, finely chopped
¼ cup Kikkoman® Rice Vinegar
2 tablespoons honey
2 tablespoons olive oil
1 teaspoon orange zest
½ teaspoon sea salt

directions

  1. Spiral slice beets, jicama and carrots using a 3mm blade on a spiral slicer. Place spiral sliced vegetables into a large mixing bowl along with the chopped mint.
  2. In a separate bowl, whisk together the rice vinegar, honey, olive oil, orange zest and sea salt.
  3. Pour the dressing over the vegetables and gently toss to coat. Cover and refrigerate 30 minutes before serving.
