ingredients

1 pound ground pork
2 teaspoons dry rubbed sage
½ teaspoon garlic powder
¼ teaspoon sea salt
¼ teaspoon black pepper
2 tablespoons Kikkoman® Less Sodium Soy Sauce
1 ½ cups chopped russet potatoes
1 cup chopped green bell pepper
½ cup chopped white onion
½ teaspoon paprika
1 cup shredded cheddar cheese
8 medium eggs
2 green onions, chopped

directions

  1. Preheat oven to 350ºF. Meanwhile, heat ground pork in a 10-inch round cast iron skillet over medium heat and use a spatula to break up into crumbles. Cook 5 minutes. Stir in sage, garlic, salt, black pepper and soy sauce to coat pork.
  2. Stir in potatoes, bell pepper, onion and paprika. Cover and cook for 10 minutes.
  3. Turn heat off. Sprinkle cheese on top of skillet and make four wells in mixture to create room for eggs. Add 2 eggs to each well.
  4. Transfer skillet to oven and bake 12-14 minutes, until egg whites are cooked through. Serve hot, garnished with green onion.
