Vegetarian Katsu Noodles

This quick and delicious dish is also vegetarian — perfect for Meatless Monday! Toss tofu, fresh veggies, and slurpy noodles in Kikkoman® Katsu Sauce for an easy dinner that comes together in under 30 minutes. While this meal serves two, you can easily double or triple it for a family dinner or deliberate leftovers. Ideal for meal prep! Packed with nutrients, you'll love how it's packed with flavor, too! As the seasons change, swap in your favorite seasonal vegetables.

Ingredients

Prep Time: 10 minutes
Cook Time: 18 minutes
Total Time: 28 minutes

½ cup + ⅙ cup Kikkoman® Katsu Sauce, divided
1 cup firm tofu, cubed
1 tablespoon Kikkoman® Sesame Oil
1 cup mushrooms, sliced
1 cup pea pods
½ cup red bell pepper, julienned
½ cup baby corn, chopped
4 ounces dry chow mein noodles
⅓ cup cilantro, chopped, for garnish

Instructions

  1. Pour ½ cup of katsu sauce over tofu in a small bowl and set aside.
  2. Heat sesame oil over medium heat in a large sauté pan. Add vegetables and sauté 10 minutes.
  3. In the meantime, cook noodles according to package directions. Add tofu and sauce to pan with veggies and sauté for 5 minutes longer. Drain noodles and immediately add to sauté pan with remaining sauce. Use tongs to toss and coat noodles with sauce.
  4. Transfer to a serving bowl and top with cilantro.
