Try a healthier way to enjoy your favorite savory snack: these easy homemade potato chips are fun to make with the kids and ensure you know what's in your treats, too! Bake in the oven and then enjoy the crunchy goodness by the pool, as an afternoon snack, or as a unique recipe for picnics and backyard barbecues! Serve your chips alongside diner-style sandwiches and wraps or as an appetizer with a homemade dipping sauce.
Preheat your oven to 400°F. Spray baking sheets with cooking spray.
Wash and then slice potatoes very thinly (using a mandolin is ideal). In a large bowl, combine sesame oil, soy sauce, lime juice, and garlic. Add thinly sliced potatoes and toss to coat. Marinate for 30 minutes.
Arrange potato slices on prepared baking sheets, spacing them ¼ inch apart. Bake, rotating sheets halfway through (keep an eye on them so they don’t burn) until potatoes are crisp and golden brown, about 20 minutes. Spread out potatoes on parchment paper; let dry 5 minutes. Garnish with cilantro and 1½ of the green onions.
Mix together mayonnaise, sour cream, sriracha, and the remaining green onion. Serve alongside the chips.
