Thai Peanut Pasta Salad

Plan a backyard barbecue with all the best sides, including this easy pasta salad with a Thai flavor twist. The simple homemade dressing has just 4 ingredients, including tart lime and agave for sweetness. It’s easy to customize for every season with any fresh, seasonal vegetables you have on hand, or any pantry items you want to include. Pair with grilled chicken, add marinated beef skewers on the side, or top with sliced tofu steaks for a vegetarian dinner instead.

Ingredients

Yield: Serves 8
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

2 boxes penne pasta 
1 cup jicama, thinly sliced
1 cup frozen fire roasted corn, thawed
1 cup red bell pepper, sliced
½ cup cilantro, chopped 
¼ cup peanuts, chopped

For Dressing
¼ cup lime juice
¼ cup Kikkoman® Less Sodium Soy Sauce
2 tablespoons Kikkoman® Sesame Oil
2 tablespoons agave nectar

Instructions

  1. Cook pasta according to package directions. Drain and rinse under cold water. Add pasta to a large mixing bowl along with jicama, corn, bell pepper and cilantro.
  2. Stir together ingredients for dressing in a small bowl. Pour dressing over salad and gently stir to coat. Pour salad onto a serving platter and garnish with chopped peanuts.
