ingredients

2 boxes penne pasta
1 cup jicama, thinly sliced
1 cup frozen fire roasted corn, thawed
1 cup red bell pepper, sliced
½ cup cilantro, chopped
¼ cup peanuts, chopped

For Dressing
¼ cup lime juice
¼ cup Kikkoman® Less Sodium Soy Sauce
2 tablespoons Kikkoman® Sesame Oil
2 tablespoons agave nectar

directions

  1. Cook pasta according to package directions. Drain and rinse under cold water. Add pasta to a large mixing bowl along with jicama, corn, bell pepper and cilantro.
  2. Stir together ingredients for dressing in a small bowl. Pour dressing over salad and gently stir to coat. Pour salad onto a serving platter and garnish with chopped peanuts.
