ingredients

For Kabobs
2 small zucchinis, sliced into 1 ½ inch circles
1 small red onion, coarsely chopped
1 red bell pepper, coarsely chopped
8 Brussels sprouts
8 cremini mushrooms

For Marinade
¼ cup Kikkoman® Rice Vinegar
¼ cup olive oil
½ cup fresh cilantro
¼ cup fresh basil
2 teaspoons garlic, minced
1 teaspoon sea salt
Cracked black pepper to taste

 

1 tablespoon cooking oil for greasing

directions

  1. Preheat grill to 400-425ºF. Slide 1 piece of zucchini, red onion, bell pepper, Brussels sprouts and mushrooms onto 1 metal skewer. Repeat so that there are 2 of each vegetable on skewer. Repeat with 3 more skewers to create 4 vegetable kabobs.
  2. Stir together ingredients for marinade and brush or drizzle over vegetables.
  3. Lightly grease grill grates with oil and place vegetable kabobs on the grill. Grill for 4-5 minutes. Turn and grill an additional 4-5 minutes.
  4. Slide vegetables off skewers and enjoy hot.
