ingredients

For Sauce
½ cup pineapple juice
⅓ cup Kikkoman® Less Sodium Soy Sauce
¼ cup chicken stock
2 tablespoons tomato paste
1 tablespoon all-purpose flour
1 teaspoon garlic, minced
1 teaspoon ginger, grated

1 teaspoon Kikkoman® Sesame Oil
1 pound chicken breast, cubed
1 cup bell pepper, diced
1 cup fresh pineapple, chopped
1 cup sweet white onion, chopped
1 teaspoon sesame seeds
½ cup green onion, chopped
4 cups cooked rice (optional)

directions

  1. Stir together ingredients for sauce in a small mixing bowl until flour is dissolved.
  2. Turn electronic pressure cooker to Sauté setting. Add sesame oil and heat for 1 minute. Add chicken and sauté for 8 minutes, stirring once.
  3. Press Cancel and add bell pepper, pineapple and white onion. Pour sauce evenly over ingredients. Secure lid and close vent valve. Press Manual setting for 10 minutes.
  4. When timer goes off, allow pressure to naturally release before opening vent valve and releasing remaining pressure. Remove lid and stir.
  5. Serve sweet and sour chicken hot alongside rice topped with sesame seeds and green onion.
