Cheesy Sweet Potato Fritters with Chinese Sausage

Easy appetizer, savory breakfast recipe, quick lunch, or rich and delicious side dish — these fritters can do it all! If you enjoy latkes or hash browns, these pan-fried sweet potato fritters will be right up your alley. They come together in half an hour, packed with savory goodness, to make the perfect comfort food. Serve them with fried eggs, homemade soup, or sour cream dip with a touch of Kikkoman® Sriracha Hot Chili Sauce.

Ingredients

Yield: Makes 8-9 fritters

For Fritters
2 cups peeled and grated sweet potato
2 Chinese sausage links, casings removed and finely chopped (about ⅔ cup)
½ cup shredded sharp cheddar cheese
½ cup Kikkoman® Panko Bread Crumbs
2 large eggs + 1 egg white
¼ cup finely chopped green onion
¼ cup vegetable oil for cooking

For Sriracha Sour Cream Dip
½ cup sour cream
¼ cup mayonnaise
2 teaspoons Kikkoman® Sriracha Hot Chili Sauce

Instructions

  1. Combine sweet potato, sausage, cheese, panko, eggs, and green onion in a medium mixing bowl and stir thoroughly to moisten.
  2. Heat 2 tablespoons of oil in a large non-stick pan over medium heat for 1 minute. Scoop 3-4 mounds of mixture onto the hot skillet using a ⅓ cup measuring cup. Use a spatula to shape into round fritters. Cook for 4 minutes on each side. Transfer cooked fritters to a paper towel lined plate and repeat with remaining mixture, adding oil to the pan 1 tablespoon at a time when needed.
  3. Stir together ingredients for sriracha sour cream dip in a small bowl. Serve fritters warm alongside dipping sauce.
