ingredients

6 medium sweet white onions, sliced to ¼ inch thickness
4 tablespoons unsalted butter
6 cups low-sodium beef stock
¼ cup Kikkoman® Rice Vinegar
3-4 tablespoons Kikkoman® Soy Sauce
2 sprigs thyme
1 dried bay leaf
¼ teaspoon cracked black pepper

For Serving
1 French bread baguette, sliced into ½ inch slices
1 ½ cups shredded gruyere cheese

directions

  1. Add slices of onion to the slow cooker and top with butter. Cover and cook on low for 8 hours or overnight or on high for 4 hours. Stir onions once for even cooking.
  2. Add beef stock, rice vinegar, soy sauce, thyme, bay leaf and cracked pepper. Cover and cook for 2-4 hours longer.
  3. Heat oven to broil. Place slices of bread onto a baking sheet and sprinkle with cheese. Broil for 3-5 minutes, until bread is toasted and cheese is melted.
  4. Remove thyme and bay leaf from soup. Ladle soup into bowls and place toasted bread on top. Enjoy hot.
