Coconut Bacon

Coconut Bacon | A vegan diet doesn’t mean you have to miss out on smoky bacon flavor! Add meatless bacon to pasta dishes, sprinkle over roasted vegetables (like asparagus or Brussels sprouts), add to vegan BLT sandwiches, or meal-sized salads, like a vegan Caesar salad. For breakfast, serve coconut bacon with tofu eggs and skillet potatoes, or as a topping for breakfast waffles. If you like sweet and salty desserts, coconut bacon goes with fudge brownies or on top of creamy maple ice cream!

Ingredients

Yield: Serves 8
Prep Time: 10 minutes
Cook Time: 14 minutes
Total Time: 24 minutes

4 cups unsweetened coconut flakes
2 tablespoons vegetable oil
2 tablespoons Kikkoman® Soy Sauce
2 tablespoons maple syrup
1 teaspoon liquid smoke (mesquite or hickory)
1 teaspoon smoked paprika

Instructions

  1. Preheat oven to 325°F and line a large baking sheet with parchment paper. In a medium mixing bowl, combine all ingredients and stir to coat.
  2. Spread coconut evenly on baking sheet and bake for 6 minutes. Stir and bake 6-8 minutes longer.
  3. Remove baking sheet from oven and cool for 10 minutes. The coconut bacon will further crisp as it cools. Store in a sealed container in a dry location. Add to salads, sprinkle on roasted vegetables,or enjoy on its own. Also delicious on sweets like waffles or ice cream.
