Teriyaki Mini Meatloaves

Teriyaki Mini Meatloaves | Meatloaf is a classic fall recipe that you can pair with all your favorite fall side dishes, and it’s so fun to get creative with flavor combinations. Try teriyaki flavor this time, along with fresh garlic and ginger for some zing, plus a touch of spice if you enjoy the heat. Ideal for a weeknight family dinner, especially when you serve them up in little loaf pans to cook them a little faster than usual. A low effort, maximum enjoyment kind of recipe!

Ingredients

Yield: Serves 3-6
Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

1 pound 85/15 ground beef
½ cup Kikkoman® Panko Bread Crumbs
1 large egg
2 tablespoons finely chopped green onion, plus more for serving
1 teaspoon minced garlic
1 teaspoon minced ginger
½ teaspoon red pepper flakes (optional)
2 tablespoons + 3 tablespoons Kikkoman® Teriyaki Takumi, Original, divided, plus more for serving

Instructions

  1. Preheat oven to 350ºF and lightly grease 3 mini meatloaf tins with cooking spray. In a large mixing bowl, combine ground beef, panko, egg, green onion, garlic, ginger, red pepper flakes (optional) and 2 tablespoons of teriyaki takumi sauce. Mix well to incorporate all ingredients.
  2. Divide mixture between prepared tins and spread evenly to take the shape of tins. Place on a baking sheet and bake for 30 minutes.
  3. Carefully remove pan from oven and brush tops of meatloaves with remaining 3 tablespoons of teriyaki takumi sauce. Return to oven for 10 minutes longer.
  4. Serve meatloaves hot, garnished with green onion and extra teriyaki takumi sauce if desired.
