Fresh Pear Salsa

ingredients

2 teaspoons vegetable oil
1 cup chopped onion
1/2 cup chopped celery
2 teaspoons minced fresh ginger root
1-1/2 pounds ripe fresh pears, peeled, cored and chopped
2/3 cup raisins
3 tablespoons brown sugar, packed
1 tablespoon Kikkoman Rice Vinegar
1/4 cup Kikkoman Soy Sauce

directions

  1. Heat oil in large skillet over medium heat. Add onion and celery; sauté 10 minutes. Add ginger; sauté 5 minutes longer, or until onions are transparent.
  2. Stir in pears, raisins, brown sugar, vinegar and soy sauce. Reduce heat and simmer, uncovered, 10 minutes. Remove from heat; cool completely.
  3. Pour into airtight container and refrigerate until thoroughly chilled.
  4. Serve with pan-fried pork chops, hot or cold cooked chicken or turkey or roast beef, etc.
