- Preheat oven to 325°F and line a large baking sheet with parchment paper. In a medium mixing bowl, combine all ingredients and stir to coat.
- Spread coconut evenly on baking sheet and bake for 6 minutes. Stir and bake 6-8 minutes longer.
- Remove baking sheet from oven and cool for 10 minutes. The coconut bacon will further crisp as it cools. Store in a sealed container in a dry location. Add to salads, sprinkle on roasted vegetables,or enjoy on its own. Also delicious on sweets like waffles or ice cream.
