ingredients

1 teaspoon olive oil
2 tablespoons Kikkoman® Teriyaki Marinade & Sauce
½ pound peeled and cored pineapple, cut into 1-2 inch thick slices
½ medium jalapeño, ribs removed
1 cup chopped tomato
½ cup chopped red onion
¼ cup finely chopped cilantro
¼ teaspoon ground cumin
¼ teaspoon salt
Corn tortilla chips for serving

directions

  1. Preheat gas grill to medium heat (350-400ºF). Stir together olive oil and teriyaki sauce. Brush pineapple slices with mixture.
  2. Place pineapple slices and jalapeño on grill and cook for 3 minutes on each side.
  3. Transfer to a cutting board and cool for 10 minutes.
  4. Finely chop pineapple and jalapeño, and add to a medium mixing bowl, including juices. Add chopped tomato, red onion, cilantro, cumin and salt. Stir well to combine. Serve with tortilla chips.
