Umami Beef Jerky

kikkoman products used:

ingredients

1 lb London Broil, Eye of Round, or Top Round
1 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp coriander powder
1/2 tsp paprika
1/2 cup- Brown sugar
½ cup Kikkoman Soy Sauce
1 cup apple juice
½ cup Bourbon [optional]

directions

  1. Preheat oven to 300 degrees
  2. Trim as much fat as you can. Fat tends to rancify quickly, so the less fat on the meat, the better your jerky will store
  3. Slice meat into ¼” thick strips and marinate overnight (it’s easier to slice if meat is partially frozen)
  4. Line bottom of your oven with foil and pat each slice dry
  5. Place meat directly on oven rack, or stick a toothpick through the top of each slice and lay toothpicks on rack so the strips hang vertically
  6. Bake for 10 min
  7. Turn temperature down to 160 (or lowest setting, if higher than that) and crack the door open with a metal or wooden utensil to let the moisture out
  8. Bake for 4-6 hours, depending on your preference for how chewy or dry you like your jerky
