Garlic Mashed Potatoes

ingredients

1 pound russett potatoes, peeled and cut into 1-inch chunks
3/4 teaspoon salt, divided
1/4 cup Pearl Original Organic Soymilk
2 tablespoons butter or trans fat-free butter-like spread
1 clove garlic, pressed*

directions

  1. Combine potatoes, 1/2 teaspoon salt and 2 cups water in medium saucepan. Cover saucepan; bring to boil. Reduce heat; simmer, covered, 12 minutes, or until potatoes are tender, stirring once. Drain.
  2. Mash potatoes in large bowl with potato masher or beat with electric mixer on low speed.
  3. Combine soymilk, butter, garlic and remaining 1/4 teaspoon salt in glass measuring cup. Microwave on Medium (50%) 1 minute, stirring once.
  4. Gradually beat soymilk mixture into potatoes until light and fluffy.
    1. *For plain mashed potatoes, omit garlic.
