- Combine potatoes, 1/2 teaspoon salt and 2 cups water in medium saucepan. Cover saucepan; bring to boil. Reduce heat; simmer, covered, 12 minutes, or until potatoes are tender, stirring once. Drain.
- Mash potatoes in large bowl with potato masher or beat with electric mixer on low speed.
- Combine soymilk, butter, garlic and remaining 1/4 teaspoon salt in glass measuring cup. Microwave on Medium (50%) 1 minute, stirring once.
- Gradually beat soymilk mixture into potatoes until light and fluffy.
*For plain mashed potatoes, omit garlic.
