Harvest Pumpkin Pie

ingredients

1 can (15 oz.) pumpkin
2 eggs, beaten
2/3 cup sugar
1-1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 cup Pearl Original Organic Soymilk
1 unbaked 9-inch prepared pastry pie shell

directions

  1. Blend pumpkin, eggs, sugar, pumpkin pie spice and salt in large bowl. Gradually stir in soymilk. Pour mixture into pie shell.
  2. Bake in preheated 425ºF. oven for 15 minutes. Reduce oven temperature to 350º; cover edge of crust with strips of aluminum foil. Bake pie 40 minutes longer, or until knife inserted near center comes out clean.
  3. Cool completely on wire rack. (Refrigerate any remaining pie.)
