- Sift together flour, sugar, baking powder and salt into large mixing bowl. Add mincemeat and nuts to flour mixture, tossing until well coated.
- Blend eggs, milk, oil and vanilla. Add liquid mixture all at once to flour mixture, stirring only until flour is moistened. Turn into six 5-3/4 x 3-1/4 x 2-inch loaf pans.
- Bake in 350ºF. oven 70 minutes, or until wooden pick inserted in center comes out clean.
- Cool completely before slicing. (Note: For best results, wrap and store overnight before slicing.) *Holiday Mincemeat: Thoroughly cook 1/2 pound ground pork in Dutch oven or large saucepan. Stir in 6 cups peeled, cored and chopped cooking apples (about 2 pounds); 2 cups finely chopped pitted dried plums (prunes); 1 cup brown sugar, packed; 1 cup raisins; 3/4 cup Kikkoman Teriyaki Marinade & Sauce; 1/4 cup cider vinegar; 1 Tbsp. ground cloves; 1 Tbsp. grated orange peel and 1/4 cup orange juice. Bring mixture to boil, reduce heat and simmer, uncovered, 35 minutes. Remove from heat and cool slightly. Stir in 2 Tbsp. brandy. Pack in sterilized jars and refrigerate a few days for flavors to blend. Makes 6 cups.
