Kickin’ Nachos

ingredients

¼ cup Kikkoman® Less Sodium Soy Sauce
3 tablespoons honey
1-2 + 2 teaspoons tablespoons Kikkoman® Sriracha Hot Chili Sauce, divided
1 tablespoon Kikkoman® Rice Vinegar
2 garlic cloves, minced
1 pound boneless, skinless chicken thighs or breasts
1 ½ bags restaurant-style tortilla chips
1 cup Monterey jack cheese, shredded
1 cup cheddar cheese, shredded
½ cup feta cheese
1 red bell pepper, diced
¼ cup tablespoons black olives, sliced
2-3 tablespoons sliced jalapenos
⅓ cup fresh cilantro leaves
1 green onion, sliced thinly
1 cup sour cream

directions

  1. Preheat your oven to 350℉.
  2. Pour soy sauce, honey, sriracha, rice vinegar, and garlic into a bowl and stir to combine. Place chicken into the sauce and stir to coat.
  3. Place chicken on foil lined baking sheet and bake for 20-25 minutes.
  4. Once cooked, remove chicken and transfer to a cutting board. Use two forks to shred the chicken.
  5. Increase the heat of your oven to 400℉ and line a large baking sheet with parchment paper or spray a cast iron skillet with cooking spray.
  6. Working in layers, spread a layer of chips onto the pan and top with shredded chicken, peppers, olives, jalapenos, and cheeses. Repeat these layers.
  7. Bake in the oven until the cheese has melted. This should take 7-10 minutes.
  8. Remove from oven and top with fresh green onions and cilantro.
  9. Stir together 1 cup of sour cream with 2 teaspoons of sriracha and serve on the side of the nachos.
