ingredients

1 large head Romaine lettuce
6 ounces sliced deli ham (about 1/8 inch thick)
6 ounces sliced Monterey jack cheese (about 1/8 inch thick)
1 cup frozen peas, thawed
1 zucchini, cut into matchsticks
1/3 cup dried cranberries
1/3 cup Kikkoman Plum Sauce
2 tablespoons lemon juice
3 tablespoons vegetable oil

directions

  1. Separate leaves from lettuce head; wash and pat dry. Cut enough lettuce leaves crosswise into 3/4-inch wide strips to measure 6 packed cups.
  2. Cut ham and cheese into 1 x 1/2-inch pieces. Place lettuce, ham, cheese, peas, zucchini and cranberries in large salad bowl.
  3. Combine plum sauce and lemon juice. Gradually whisk in oil until well blended (dressing will be thick); pour over salad and toss to coat all pieces well. Serve immediately.
