- Slice the red and brown onions thinly. Cut the ham into halves and slice into 1cm widths.
- Have a large bowl, Mix red and brown onions, sprinkle with salt, mix well, and let them sit for about 10 minutes until softened.
- Squeeze out the moisture from the onions.
- Prepare the dressing by combining ingredients A.
- Mix together the onions, ham, and dressing.
- Garnish with shredded shiso leaves. Sprinkle with coarse ground black pepper to taste.
