- Pour ½ cup of katsu sauce over tofu in a small bowl and set aside.
- Heat sesame oil over medium heat in a large sauté pan. Add vegetables and sauté 10 minutes.
- In the meantime, cook noodles according to package directions. Add tofu and sauce to pan with veggies and sauté for 5 minutes longer. Drain noodles and immediately add to sauté pan with remaining sauce. Use tongs to toss and coat noodles with sauce.
- Transfer to a serving bowl and top with cilantro.
