Pressed Piggy Buns

Ingredients

Youtiao (Chinese Donuts)

2 1/2 cups All Purpose Flour

2 tsp Baking Powder

1/4 tsp Baking Soda

1/2 tsp Kosher Salt

2 each 2 eggs

1/2 cup Water

2 tbs Kikkoman Sesame Oil

Piggies (Pork Patties)

16 ounces Ground Pork

4 ounces White Onions, Minced

Chili Crisp Hoisin

1 1/2 cups Kikkoman Gluten Free Hoisin

1/2 cup Chili Crisp

Finishing

As Needed Chives, Minced

Directions

Dough:

  1. Combine all ingredients in a stand mixer with a dough hook. Knead on low speed for 8 minutes, or until it’s smooth and elastic.
  2. Transfer dough to an oiled bowl, cover bowl with plastic wrap, and let rest at room temperature for 2 to 4 hours.
  3. Cut dough into 2 pieces and press into a rectangle. The ideal width is 4” and the length can be variable. 
  4. Cut dough into 4”x2” strips. Place one strip on top of another and press the center with a chopstick lengthwise to help the two strips hold together. 

Piggies:

  1. Blend together ground pork and minced onions. Form into 1-to-2 2-ounce patties.
  2. Place patties on a hot griddle and press or smash to desired thickness, cooking on both sides. 

Chili Crisp Hoisin:

  1. Combine ingredients into a mixing bowl.
  2. Whisk to combine. 
  3. Transfer to a squeeze bottle until ready to use.
