Orange Chicken

ingredients

9 pounds breaded boneless chicken chunks
4 ½ cups Kikkoman Orange Sauce, warm
About 1 tablespoon sesame seeds
18 cups cooked rice
About 3 tablespoons diced (¼-inch) red pepper, optional
About 3 tablespoons diagonally sliced (¼-inch) scallion, optional
24 orange slices, optional
24 scallion ribbons, optional

directions

Fry the chicken chunks according to the manufacturer’s instructions. Coat the chicken with the orange sauce and sprinkle with sesame seeds. (If the chicken is fried to order or in small batches, coat each 6-ounce portion with 3 tablespoons of orange sauce and sprinkle with 1/8 teaspoon of sesame seeds.) Keep hot.

 

For each serving, plate 6 ounces of chicken (on a bed of rice, if desired). Top with the red pepper and scallion pieces and garnish with orange slices and scallion ribbons.
