Salmon Spring Roll with Spicy Peanut Poke Dipping Sauce

ingredients

5 oz Cooked Salmon, flaked
1 oz Green Cabbage, shredded
1/2 oz Pickled Ginger, chopped
1/2 oz Cucumber, julienne cut
1/2 oz Asparagus, blanched, halved lengthwise
1/2 oz Daikon Sprouts
1 Rice Paper Wrapper, 22cm

Spicy Peanut Poke Dipping Sauce:
1/2 Cup Kikkoman Poke Sauce
1 tbsp Kikkoman Rice Vinegar
1/4 Cup Smooth Peanut Butter

directions

  1. Combine Spicy Peanut Poke Dipping Sauce ingredients in bowl, whisk until well combined and set aside.
  2. Place warm water in a large shallow bowl. Dip rice paper wrapper in warm water for 2 seconds to soften, then lay flat on wet paper towel.
  3. Place on top of wet rice paper wrapper in rows: cabbage, flaked salmon, ginger, cucumber, asparagus and daikon sprouts. Leave a border of 2 inches around the edge of the wrapper.
  4. Fold uncovered edges of wrapper inward, then tightly roll the wrapper around the filling.
  5. Serve Salmon Spring roll with Spicy Peanut Poke Dipping Sauce on the side.
