Scallion Pancake Smash Taco

ingredients

1 pound Ground Pork
1/4 cup (+ 1/2 cup for sauce) Kikkoman GF Hoisin Sauce
1 tablespoon Kikkoman Soy Sauce
1 tablespoon Ginger, minced
1 tablespoon Garlic
1/4 cup Green Onion, sliced thin
1/8 cup Cilantro, chopped
1 cup Mayonnaise
1/4 cup Cucumber, ribbon
1/4 cup  Carrot, ribbon
1 teaspoon Chili Crisp
1 each Scallion Pancake, frozen

Method

  1. To make the filling: mix ground pork, Kikkoman Hoisin sauce, Kikkoman Soy Sauce, ginger, garlic, green onion and cilantro until combined. Refrigerate
  2. To make the Hoisin Mayo: whisk mayonnaise and ½ cup hoisin until combined and transfer to squeeze bottle.
  3. Cook off the scallion pancakes on a griddle over medium low heat, flipping several times until golden and crispy.
  4. Gently smash 1 portion of pork filling in a thin even layer across 1 side of the pancake covering as much as possible. Cook on a griddle on medium heat for approx. 4 minutes until pork is cooked throughout.
  5. Toss cucumber and carrot with chili crisp.
  6. Drizzle Hoisin mayo onto cooked smash taco and top with chili crisp seasoned veggies.

Variation: Shrimp of beef can but substituted for the pork.

Note: Viral internet trends are very appealing to Gen Z but aren’t always applicable in foodservice, however this recipe takes the viral smash burger taco to a whole new level. I’ve taken the filling for a pork dumpling and used a scallion pancake as the vessel for this mash up of an East meets West handheld delight that is put over the top with Hoisin mayo and chili crisp seasoned veggies!
