- Spray air fryer with olive oil cooking spray. Slice pieces of cod into equal portions. Add all-purpose flour to a shallow bowl. In a second bowl, beat together eggs, Dijon mustard and chopped dill. In a third shallow bowl, combine panko, paprika, salt and pepper.
- Coat each piece of cod in flour, shaking off excess. Next, dunk in egg mixture and allow excess egg to run off. Finally, dip in panko mixture to coat.
- Place 3-4 pieces into basket of air fryer with space in between for air to flow. Spray cod with cooking spray and air fry for 6 minutes at 380°F. Use tongs to turn cod and fry for 5-6 minutes longer. Repeat with remaining cod.
- While cod cooks, melt butter over medium-low heat. Remove from heat and whisk in soy sauce, lemon juice, and garlic powder. Pour into a small dipping bowl. Serve cod hot with lemon-soy butter sauce for dipping and drizzling.
