- Preheat gas grill to medium-high or 425-450ºF heat for 10 minutes. Peel and slice eggplant into 8 pieces and brush with 2 tablespoons of olive oil. Place on grill and grill for 3 minutes. Turn and grill 3 minutes longer. Remove eggplant from the grill and let cool on a tray for 5 minutes.
- Add eggplant to a food processor and pulse to break into small pieces. Add remaining ingredients for baba ganoush to food processor. Pulse until a mostly smooth consistency.
- Brush 1 tablespoon of olive oil on both sides of pizza crust. Place on grill and grill for 2 minutes on each side. Remove from grill and spread baba ganoush on crust. Top with tomatoes, feta cheese, oregano and drizzle with remaining tablespoon of olive oil. Return to grill and continue to grill for 7-8 minutes.
- Cool crust for 5 minutes. Top with baby arugula and slice into 6-8 slices. Enjoy hot.
