ingredients

1 medium onion, chopped
1 tablespoon vegetable oil
1 can (14-1/2 oz.) chicken broth plus enough water
to make 2-1/2 cups
1 package (10 oz.) frozen peas and carrots
1/3 cup uncooked alphabet noodles
3-1/2 tablespoons Kikkoman Soy Sauce
1 large tomato, diced
Black pepper, to taste
Parmesan cheese (optional)

directions

  1. Sauté onion in hot oil in large saucepan over high heat 3 minutes, or until onion is translucent. Add broth mixture and peas and carrots; bring to boil.
  2. Stir in noodles, soy sauce and tomato. Reduce heat; simmer, covered, 5 to 7 minutes, or until noodles are tender, yet firm.
  3. To serve, sprinkle with pepper and Parmesan cheese, as desired.
