- Preheat oven to 350F.
- Melt the butter over medium-low heat, stirring constantly until it turns brown. Remove from heat and transfer to a bowl. Add the brown sugar and white sugar to the butter, mixing until well combined.
- Whisk in the vanilla extract, soy sauce, and egg until smooth. Sift in the flour, baking soda, and espresso powder, and fold until just combined. Add three quarters of the chopped dark chocolate and fold in.
- Form the dough into 9 even balls and place them on a parchment lined baking sheet. Add the remaining chopped dark chocolate on top and refrigerate for 30 to 45 minutes.
- Bake for 12-15 Minutes. Remove and let cool on a wire rack, sprinkling the top with flaky salt. Enjoy warm!
