Creamy Spinach Soup

Makes 4 servings

ingredients

1/4 cup butter or trans fat-free
butter-like spread
1 cup finely chopped onion
3 tablespoons all-purpose flour
2 cups chicken broth
1 package (10 oz.) frozen
chopped spinach, thawed
1/4 teaspoon salt
1 cup Pearl Green Tea Organic
Soymilk
1/8 teaspoon nutmeg

directions

  1. Heat butter in large saucepan over medium heat; add onion and sauté 8 minutes, or until onion is translucent.
  2. Add flour; cook, stirring, 2 minutes. Gradually pour in broth, stirring until smooth. Add spinach and salt. Bring to boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally.
  3. Stir in soymilk and nutmeg. Cook until heated through.
