- Heat butter in large saucepan over medium heat; add onion and sauté 8 minutes, or until onion is translucent.
- Add flour; cook, stirring, 2 minutes. Gradually pour in broth, stirring until smooth. Add spinach and salt. Bring to boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally.
- Stir in soymilk and nutmeg. Cook until heated through.
