ingredients

20oz Japanese pumpkin

5oz ground pork or beef

5oz sweet onion

1 egg

1/2 cup flour

1 cup Kikkoman®Panko Bread Crumbs

Salt and pepper to taste

directions

1. Cut the pumpkin into small pieces. Take out the seeds. Remove skin from each wedge, if desired.

2. Microwave the pumpkin for 7-8 minutes until the pumpkin is soft.

3. Mash the pumpkin.

4. Dice the onion into small pieces.

5. Sauté onion until light golden brown. Remove from pan.

6. Stir fry ground meat until it’s cooked. Mix with pumpkin and sautéd onion.

7. Scoop out enough mashed pumpkin to make a golf ball-sized portion.

8. Repeat with the remaining ingredients on a plate or cutting board.

9. The croquettes are first rolled in flour, then dipped in beaten egg, and finally rolled in Panko.

10. Heat oil to medium-high heat to 340°F. Deep fry croquettes for 2 minutes.

11. Serve with any salad.
