- Stir together ingredients for marinade in a small bowl. Reserve ¼ cup of marinade for serving.
- Arrange sliced vegetables in a large shallow dish and pour marinade evenly over the top. Stir to coat. Cover and marinate for 30 minutes at room temperature.
- Heat outdoor grill or grill pan to medium heat. Grease with cooking oil. Transfer vegetables to the hot grill using tongs and grill for 3 minutes. Turn and grill 2-3 minutes longer.
- Serve hot with remaining marinade for drizzling or dipping.
