KBBQ Breakfast Burrito

About
Whole grain tortilla filled with fluffy scrambled eggs, Korean BBQ turkey sausage, crispy tater tots, melty mozzarella cheese, and fresh green onions for a sweet and savory breakfast with bold Korean-inspired flavor.

Ingredients
4 pounds Potato products, frozen, rounds
4 ounces Butter, unsalted, melted
3 pounds 2 ounces Eggs, liquid, whole
3 ¼ cups Kikkoman Korean BBQ Sauce
4 pounds Sausage, turkey, crumbles, thawed
1 pound 9 ounces Cheese, mozzarella, shredded
5 ounces Onions, Green, sliced
50 each Tortillas, whole grain, 8 inch, warmed
Allergens: Milk, Egg, Sesame, Soy, Wheat
Directions
Day before service:
- Bake potato rounds according to manufacturer’s instructions until fully heated and lightly crisp.
CCP: Cool rapidly to ≤41°F. Refrigerate. - Combine egg and melted butter, whip thoroughly. Pour in a sprayed 2″ hotel pan.
- Cook in a steamer for approximately 20 minutes. Half way through cooking, stir to loosen eggs into a scramble.
CCP: Cook eggs to ≥155°F for 15 sec. - Once cooked, transfer eggs to a perforated pan inside a hotel pan in cooler to drain.
CCP: Cool rapidly to ≤41°F. Refrigerate. - Mix KBBQ Sauce and turkey crumbles until thoroughly combined.
- Fold in chilled scrambled eggs, cheese, and green onions.
- To assemble lay out warmed tortilla shells on a clean surface area.
On each tortilla add: 1-#8 scoop (rounded) of Egg/Sausage mixture and 4-Crispy potato rounds - Gently fold ends of tortilla in to cover mixture and roll tightly, burrito style. Swaddle wrap burrito in foil paper.
CCP: Cold hold at ≤41°F overnight in refrigerator.
Day of Service:
- Preheat oven to 350°F
- Reheat burrito for 20 minutes.
CCP: Reheat previously cooked and cooled foods to ≥165°F for 15 sec within 2 hr.
CCP: Hold hot foods at ≥135°F during service.
