Sweet Thai Chili Chicken & Waffle Sliders

Crispy chicken layered between mini waffles and finished with a drizzle of gluten-free Thai sweet chili sauce for a sweet, savory, and globally inspired breakfast handheld.

Ingredients

• 100 each( approx. 7 pounds) Chicken, tenders, crispy
• 3 cups Kikkoman Sweet Thai Chili Sauce
• 100 each Waffles, whole-grain, mini
• 1 ¾ cup Kikkoman Sweet Thai Chili Sauce
• 1 ¾ cup Mayonnaise, reduced calorie
• As needed Onions, green, chopped
Allergens: Milk, Egg, Soy, Wheat

Directions

  1. Cook chicken according to manufacturer’s directions.
  2. CCP: Cook poultry to ≥165°F for 15 sec.
  3. Toss hot chicken with Thai Sweet Chili Sauce
    1. CCP: Hold hot uncovered at ≥135°F during service.
  4. Cook waffles according to manufacturer’s directions, golden and crisp.
  5. To assemble: 
    1. 1-Waffle

    2. 1-Chicken Tender

    3. 1-Waffle

    4. CCP: Hold hot uncovered at ≥135°F during service.
  6. Mix Sweet Thai Chili Sauce and mayonnaise until thoroughly combined. Add to squirt bottle.
    1. CCP: Hold cold at ≤41°F during preparation and service.
  7. Drizzle with sauce and garnish with green onions.
  8. Serve 2 each.
