Fried Rice – a great use for leftovers!

Fried rice is a quick and easy dish that holds well for takeout and can be made with extra ingredients from last night’s service and even previous LTOs. Fried rice can be changed up with whatever proteins and veggies you have available and it’s a great way to allow your chefs’ creativity in a controlled format.

Start with heating peanut oil and Kikkoman Sesame Oil in a wok and then add aromatics – ginger, garlic and Kikkoman Less Sodium Soy Sauce.

Next, add an array of colorful veggies like onions, carrots, red and yellow peppers and scallions, and your choice of protein. Then add day-old rice, making sure to coat the grains with the aromatics and oils. Day-old rice is best to use because the dry texture helps create crispy grains. Finish with some more Kikkoman Less Sodium Soy Sauce and chopped chives
