Crispy Orange Chicken

About
Crispy chicken tossed in bright orange sauce layered over whole grain pizza crust with mozzarella, colorful vegetables, and finished with cilantro and green onion for a sweet-savory K–12 favorite.
Ingredients
2 pounds 4 ounces Chicken, chunks, whole grain, breaded
1 cup Kikkoman Orange Sauce
6 each Crust, pizza, round, whole grain, 16 inch
6 cups Kikkoman Orange Sauce
4 pounds 8 ounces Cheese, mozzarella, part-skim, shredded
1 pound 4 ounces Pepper, red, bell, julienne
As needed Cilantro, chopped
As needed Onions, green, chopped
1 pound 2 ounces Carrots, matchsticks
Directions
- Cook chicken according to manufacturer’s directions.
- Toss in Orange Sauce to lightly coat cooked chicken.
- Set aside for pizza assembly.
- CCP: Cook poultry to ≥165°F for 15 sec. CCP: Hold hot uncovered at ≥135°F during service.
- Preheat oven to 350.
- Lay each crust on lightly sprayed perforated sheet pan.
- Spread approximately 1 cup Orange Sauce evenly across each crust, leaving a ½-inch border.
- Sprinkle 12 ounces of cheese even across the sauce and crust, leaving a ½-inch border.
- Sprinkle ½ cup pepper strips and ½ cup carrots even across the top of cheese.
- Sprinkle 6 ounces of chicken (chop if needed) even across top of vegetables and cheese.
- Bake for 10-12 minutes or until cheese is melted and crust is crisp and golden.
- CCP: Hold hot uncovered at ≥135°F during service
- Cut each pizza into 8 slices.
- Garnish with cilantro and/or green onions for service.
