Grilled Swicy Chicken Bo Bun Salad

A fresh, globally inspired entrée salad featuring grilled swicy chicken, chilled rice noodles, crisp vegetables, and a sweet-savory gluten-free hoisin drizzle with bright herbs and sesame crunch.

Ingredients

6 pounds 4 ounces Chicken, grilled, strips, commodity, thawed

1 cup Kikkoman Gluten Free Hoisin Sauce

½ cup Kikkoman Sweet Thai Chili Sauce

¼ cup Juice, lime, fresh

¼ cup Oil, sesame

2 Tablespoons Garlic, minced

1 teaspoon Pepper, red, flakes, crushed

7 pounds 14 ounces Noodles, brown rice

6 pounds 8 ounces Romaine, shredded

2 ounces Cilantro, chopped

8 ounces Onions, green, chopped

2 pounds 9 ounces Carrots, matchsticks

7 pounds 4 ounces Edamame, shelled, tempered

Directions

  1. Mix hoisin, sweet Thai chili sauce, lime juice, sesame oil, garlic, and red pepper flakes and pour over chicken. Let marinade a minimum of 30 minutes.

  2. Cook noodles according to manufacturer’s instructions.
  3. Rinse noodles under cold water.

  4. In a large lexan toss lettuce, onions, and cilantro together.

  5. To assemble add to bowl or clamshell:
    1. 1 cup Lettuce mixture
    2. 1 cup noodles
    3. 2 oz Marinated Chicken Strips
    4. ¼ cup Matchstick Carrots
    5. ¼ cup Edamame
