Grilled Swicy Chicken Bo Bun Salad

About
A fresh, globally inspired entrée salad featuring grilled swicy chicken, chilled rice noodles, crisp vegetables, and a sweet-savory gluten-free hoisin drizzle with bright herbs and sesame crunch.
Ingredients
6 pounds 4 ounces Chicken, grilled, strips, commodity, thawed
1 cup Kikkoman Gluten Free Hoisin Sauce
½ cup Kikkoman Sweet Thai Chili Sauce
¼ cup Juice, lime, fresh
¼ cup Oil, sesame
2 Tablespoons Garlic, minced
1 teaspoon Pepper, red, flakes, crushed
7 pounds 14 ounces Noodles, brown rice
6 pounds 8 ounces Romaine, shredded
2 ounces Cilantro, chopped
8 ounces Onions, green, chopped
2 pounds 9 ounces Carrots, matchsticks
7 pounds 4 ounces Edamame, shelled, tempered
Directions
- Mix hoisin, sweet Thai chili sauce, lime juice, sesame oil, garlic, and red pepper flakes and pour over chicken. Let marinade a minimum of 30 minutes.
- CCP: Hold cold at ≤41°F during preparation and service.
- Cook noodles according to manufacturer’s instructions.
- Rinse noodles under cold water.

- In a large lexan toss lettuce, onions, and cilantro together.
- CCP: Hold cold at ≤41°F during preparation and service.
- To assemble add to bowl or clamshell:
- 1 cup Lettuce mixture
- 1 cup noodles
- 2 oz Marinated Chicken Strips
- ¼ cup Matchstick Carrots
- ¼ cup Edamame
- CCP: Hold cold at ≤41°F during preparation and service.
