Italian Style Orange Pasta

Serves 50

Ingredients

5 lbs. +9 oz. Penne pasta 
1/8 cup Oil (neutral, such as vegetable oil)
6 oz. Yellow onion, diced
1/8 cup Garlic, chopped
½  tsp. Red pepper flakes
1 cup Tomato paste
10 lbs. Tomato sauce
½ tsp. Black pepper
1 ½ tsp. Salt 
2 qts. Kikkoman®  Gluten-Free Orange Sauce

Garnish:
Orange zest as needed
Parsley as needed
Basil as needed
Parmesan cheese as needed

Directions

  1. Heat large pot or tilt skillet on medium low heat. 
  2. Add oil to pot and allow to heat up. 
  3. Add onions. Stir. Cook until soft and translucent, approximately 3-5 minutes.
  4. Once onions are translucent, add garlic and red pepper flakes. Stir. Cook until fragrant, approximately 1 minute.
  5. Add tomato paste to pan and stir. Allow to cook for 1 minute. 
  6. Add tomato sauce, salt, pepper, and orange sauce. Stir until combined.
  7. Bring to simmer, reduce heat, and cook for 30 minutes. Hot hold covered at 135° or above for service.  
  8. Batch cook pasta according to manufacturer’s instructions.
  9. Before service, toss pasta with sauce and garnish.
